Bosch Universal Owner’s
Manual
The Bosch Universal Kitchen System is built on a power unit that comes with dual drives:
The Universal has a rotary
switch with a momentary (jog or pulse) position labeled M, an off position
labeled O and three speeds. Speed 1 is the lowest speed. Recommended speed(s)
for each of the accessories is shown with symbols along the front of the
machine base.
Built-in safety cut-out
switch
All models of the MUM 6000
series kitchen machines are provided with a built-in circuit breaker to protect
the motor against overheating. If the circuit breaker trips: Turn the machine to the off position.
Wait a few minutes to allow
the motor to cool.
You will find the circuit breaker button on the bottom of the machine. After
allowing the machine to cool, press to reset. The motor should then restart.
Dough Hook and Bowl
The Universal comes with a
bowl and dough hook for kneading dough. You may have either the stainless steel
bowl with dough hook or you may have the plastic mixing bowl with dough hook
and whip assembly. Either of these is also available
as an accessory item. The dough hook is intended to be used to knead yeast
doughs and to mix cookie dough, pastry dough and also when adding nuts,
chocolate chips, dried fruit, etc. to batters.
Use of Dough Hook and
Bowl
Before beginning to attach
this or any other accessory, make sure that the power unit is on a clean, dry,
even work surface and switched to Off. Put the protective cover over the
drive that you will not be using.
Before using the bowl and dough
hook for the first time, wash the bowl, splash ring, cover and dough hook
in warm soapy water. After washing, rinse well and dry before using. Your
bowl and dough hook is now ready for use.
Whip Assembly
A set of wire whips can be
used with the Universal’s plastic bowl.
Before beginning to attach
this or any other accessory, make sure that the power unit is switched to off;
unplugged is even safer. Put the protective cover over the drive that you will
not be using (in this case cover the blender drive).
Examples of operation
with dough hook and whip assembly
This table lists examples of
how the dough hook and the whip assembly are to be used for various typical
applications. Speed 1 should be used for initial stirring and combining. Allow
butter or margarine to soften before attempting to stir. For yeast breads and
cake mixes, place liquid ingredients into the mixing bowl first.

To avoid damaging the whip
assembly, it should only be used for very light substances, such as cream, egg whites,
sauces, and batters that are thin enough to pour. Use only one of the whips
when making soft doughs such as cookie dough. The dough hook should be used for
all heavier substances such as stiff cookie dough, yeast dough, and other heavy
doughs. The dough hook should always be used when adding nuts, chocolate chips,
dried fruit, etc. to batters and doughs.
Disassembly of Mixing Bowl and Its Accessories
Before beginning to
disassemble mixing bowl and dough hook or whisk assembly, make sure that the power
unit has been turned to Off; unplugged is even safer. Remove the
cover and splash ring by turning splash ring to the right (clockwise) and
lifting off. Once the cover and splash ring have been removed the dough hook or
the whisk assembly may be removed by turning the hook or whisk assembly to the
right (clockwise) while lifting.
The mixing bowl can be
removed from the power unit by turning the bowl to the right (clockwise) while
lifting.
Care and Cleaning of
Bowl and Its Accessories
The mixing bowl, whisk
assembly, dough hook (and for the stainless steel bowl the bearing/coupling
piece, drive pin and gaskets), are dishwasher safe. The whips should be removed
from the whip drive to facilitate cleaning. The whip holder and the top of the
dough hook might become discolored and loose their shine if washed in the
dishwasher, due to the alkalinity of dishwasher detergents. If you prefer the
new appearance of shiny parts, wash these pieces by hand in warm soapy water.
For the stainless steel bowl,
remove the drive pin from the bearing/coupling for cleaning and clean the pin,
its gasket and the inner bearing surface where the drive pin rides after every
use. A small amount of vegetable oil placed on the drive pin gasket will help
to lubricate the surface. The power unit of the kitchen machine should be
cleaned using a clean damp cloth only. Never use coarse or caustic cleaning
products to clean this appliance. Never immerse the power unit in water.
Blender Accessory
The Bosch Universal Kitchen
System may include the blender accessory (MUZ6MX2). The blender accessory
consists of funnel, cover, blender bowl (also called blender jar), blade
assembly and gasket.
The blender has been
designed for mixing liquids; pureeing vegetables and fruits, preparing special
diet and infant foods; pulverizing fruit, vegetables, nuts and dried bread (for
bread crumbs); and preparing mayonnaise and sauces.

Important Safeguards
|
Use of Blender
Before beginning to use this
or any other accessory, make sure that the power unit is on a suitable work
surface and switched to off. Put the protective cover over the drive that you
will not be using.

Placing Into Operation
The speed at which the
blender is operated and the length of operation for a given job will depend
upon the degree of fineness desired and the amount of food being blended. When blending
liquids the blender bowl should not be filled past the three-cup mark. When the
blender is being used on dry materials, such as nuts or dry bread, the best
results will be obtained when the blender bowl is filled with approximately ˝
cup of food.
You should usually put the
entire amount of material to be blended into the blender before switching the
appliance on. The cover and funnel should always be in place after filling the
blender bowl and before switching on the power unit. If you add anything to the
bender, put it through the hole in the lid, leaving the cover in place. If the
blender does not start (even after trying the highest speed) after switching it
on (i.e.. there is only a buzzing sound) the blade has become blocked by the
contents. The kitchen machine should be switched off, the mixture removed and
the contents at the bottom of the bowl loosened.
When crushing ice, use 1
cup of cold water in bottom of blender jar. Crush ice on high speed, and then
quickly drain off cold water. When making beverages which call for ice cubes,
always put liquid ingredients into the blender bowl first. Do not use blender
to crush ice without cold water as described above. Crushing ice dulls blender
blades when done improperly.
Do not leave liquids
sitting in the blender. They can damage parts of the blade assembly and allow
leakage.
Disassembly of Blender
Before beginning to
disassemble the blender from the power unit, make sure that the power unit has
been turned to Off; unplugged is even safer. Remove the blender from the
power unit by turning the blender to the right (clockwise) while lifting. Use
the cover as a wrench to loosen the blade assembly.
Care and Cleaning of
Blender
The blender bowl, cover,
funnel, and blade assembly are dishwasher safe. However, it is recommended that
the blade assembly be cleaned only under flowing water rather than in the
dishwasher. Soap and detergent have an adverse effect on the bearing lubricant
of the blade assembly and the the alkalinity of dishwasher detergents might dull
the shine. Do not use scouring cleaners on any of the blender parts.
The drive unit of the
kitchen machine should be cleaned with a clean damp cloth only. Never use
coarse or caustic cleaning products to clean this appliance. Never immerse
the power unit in water.
Service and Repair
The power unit of the BOSCH
Kitchen System requires no special care other than cleaning.
The stainless steel accessory bowl with dough hook (MUZ6ER1) requires periodic replacement
of the two gaskets, whenever fluids begin to leak past them.
· Bowl gasket, part no. 047972 · Drive pin gasket, part no. 015485.
To replace the bowl gasket,
simply unscrew the nut from the bearing/coupling piece, remove the old gasket,
clean the gasket seating area and the bearing/coupling piece thoroughly and
reassemble with the new gasket. The nut should be tightened to approximately 10
foot-pounds.
To replace the drive pin
gasket, simply remove old gasket, thoroughly clean drive pin and center bearing
section of bearing/coupling piece and place new gasket on drive pin and slide
it into bearing/coupling piece. A small amount of vegetable oil placed on the
drive pin gasket will help to lubricate the surface. Gaskets may be ordered
from your local dealer, or a BOSCH
Household Products Service Center.
If any other service
becomes necessary, contact an authorized service center. Do not attempt to repair
the appliance yourself. Any work performed by unauthorized personnel may void
the warranty.
