Cut
meats across the grain into thin strips about
1-inch wide and 1/4-inch thick. Trim off all fat
and connective tissues. For easier cutting,
partially freeze by placing meats on the bottom of
the freezer for about 30 minutes. Turn and freeze
15 minutes longer. To prepare fish, filet, then
cut into 1-inch strips. |
